Vinturi: The Evolution of Decanting

Vinturi Wine AeratorThroughout history, decanters have have played a significant role in the serving of wine. Decanting wine serves two main purposes: to remove sediment and to aerate the wine (allowing it to breathe). Advancements in the winemaking industry (particularly in clarification and filtration) have significantly diminished the need to decant for the purpose of removing sediment. Aerating your wine; however, can still be an important step to vastly improve your wine experience. The decanter simulates the effects of swirling wine in a glass - allowing air to penetrate the wine, driving off gases, and stimulating the movement of molecules to trigger the release of more flavour and aroma compounds. In addition, decanting can smooth out some of the harsher aspects of the wine (like tannins or even some potential wine faults).
Typically, decanting involves pouring a bottle of wine into suitable receptacle and leaving it for a period of time ranging from just before serving to several hours. This process can be time consuming, cumbersome, and inconvenient. Pork Tenderloin With Mushroom Sauce
 
 Enjoy this favourite for the Holiday Season
 
- 4 cups Sliced Mushrooms
- 1 pork tenderloin (approx. 1lb/500g)
- 1/4 tsp. salt and pepper (each)
- 2 tsp. vegetable oil
- shallot (or half small onion) minced
- 3 cloves garlic, minced
- 1/4 cup Selection Limited Edition Red Wine
- 2 tbsp. 10% cream
 
Sprinkle the pork with salt and pepper. In large, ovenproof skillet heat half the oil over medium heat, sear pork all over, about 6 minutes. Roast in 400 degree F (200 degree C) oven for about 15 minutes, or until juices run clear when pork is pierced, and just a hint of pink remains inside. Transfer to cutting board and tent with foil; let stand for 5 minutes before carving into 1" (2.5 cm) thick slices.
Meanwhile, in same skillet, heat remaining oil over medium-low heat; saute muchrooms. When softened add shallots and garlic, stirring occassionally, until all is softened and golden, about 6 minutes.
Stor in Selection Limited Edition Red Wine, reduce by a 3rd, about 3 minutes. Stir in accumulated pork juices. Serve with Pork.
