Featuring New Millennium Sparkling Wine
While a glass of bubbly is always fantastic, why not raise your glass and make a toast with a bellini? Bellinis can be made with any sparkling wine and traditionally include peach puree and raspberry puree to give the cocktail it's beautiful blush color. However, an even simpler version can be made with 3 parts chilled sparkling wine to 1 part peach juice and a splash of raspberry juice. The bellini is a perfect way to add some pizazz to a toast whether it be a birthday, anniversary, or new years eve.
1 cup frozen peaches
1/4 cup peach schnapps
3/4 cup Prosecco or sparkling white wine
2 tablespoons sugar
1 cup ice cubes
1 teaspoon raspberry juice
1. Blend peaches, peach schnapps, sugar, raspberry juice and ice in a blender until smooth. Divide mixture between two champagne flutes. Top off each glass with equal parts sparkling wine, very lightly stir to combine and serve.
